Dang’s Shrimp Mango Salad

INGREDIENTS

2 oz lime juice

2 oz fish sauce

3 tablespoons sugar

2-3 cloves of garlic

1 red bell pepper

2 green mangos (hard)

1 red onion

1 bunch of green onions

1 bunch of cilantro

mixed salad, green and iceberg

10 prawns (you can substitute the prawns for fried tofu)

 

INSTRUCTIONS

Step 1. Mix lime juice, fish sauce, sugar, red bell pepper and garlic in the blender, combind until smooth and consistent pink color.

Step 2. Peel mango and cut into matchsticks.

TIP: cut flesh in quarter inch sheets, stack, then slice in matchsticks.

Step 3. Slice red onions and rough chop the cilantro from the stem to the leaf.

Step 4. Rinse prawns, take shells off and devein the prawns, once clean butterfly the prawns by cutting them in half up to the tail which you keep on.

Step 5. In fry pan, add a little olive oil and heat. When pan and oil are hot pan fry prawns on both sides until golden brown and crunchy.

Step 6. Place mangos in a bowl and dress with marinade. Toss well without breaking the mangos.

Step 7. Cut iceberg lettuce in rough pieces and combine with bag of mixed greens, onions and cilantro.

Step 8. Add prawns to the salad and pour mangos and marinade over top.
