Simple Iraqi Salad with Lemon Vinaigrette

Ingredients

  • 1 head iceberg lettuce, thinly sliced
  • 4 medium tomatoes, diced
  • 2 lemons
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons olive oil
  • salt (to taste)

Instructions

  • Step 1 Peel off the first few layers off the lettuce and discard. Thoroughly wash the lettuce by cutting the head in half and rinsing under water.
  • Step 2 Slice the lettuce into strips, about 1/4 inch thick.
  • Step 3 Wash the tomatoes and dice them into 1/4 inch pieces.
  • Step 4 Combine the lettuce and the tomatoes.
  • Step 5 Juice 2 lemons, making sure to discard any seeds.
  • Step 6 Add apple cider vinegar and olive oil to the lemon juice and mix well to make the dressing. Dress the salad immediately before serving and add salt to taste.
