Ingredients
- 1 pound pea shoots or other leafy greens
TIP: Linh also recommends spinach, bok choy, or watercress. You can also use your imagination! - 1 piece ginger, about 1 inch long
- 2 quarts water (or enough to submerge the leafy greens)
- 2 tablespoons fish sauce (to taste)
Instructions
- Step 1 Pour 2 quarts water in a large pot and set over high heat.
- Step 2 Smash a 1 inch piece of ginger with the butt of a knife. You do not need to peel the ginger because while it will flavor the broth, you will not eat it.
- Step 3 Put the smashed ginger into the pot of water and allow to come to a rolling boil.
- Step 4 Once the water boils, turn down the heat. Add the leafy greens to the pot and season the broth with 2 tablespoons fish sauce. You can add more or less fish sauce according to taste.
- Step 5 Allow the soup to come back to a boil, then turn off heat.
- Step 6 Serve with rice.
