Description

These long, thin, round noodles may be made out of various types of starch, including mung bean, yam, potato, cassava, or canna starch. They are used extensively in Asian cuisines, especially in soups and stir-fry dishes. Because they are sold dried, it is usually necessary to soak them in order to be able to handle them easily and cook them properly.

These noodles are not to be confused with rice vermicelli, which are white rather than translucent when cooked.
